Recently I ate at the City Tavern with visiting family and had some of the DELICIOUS Indian Pepper Pot Soup. I decided that, hell, let’s see what kind of recipes are out there. There’s a bunch. This is nothing like the Tavern’s soup and a bit of a mish mash of various recipes. Basically, it’s a mixed vegetable soup in chicken broth. It’s currently simmering away as I type, so we’ll see how it goes. The recipe, such as it is, follows.
1 green pepper chopped
1 orange pepper chopped
1 yellow pepper chopped
2 white potatoes grated
1 large parsnip grated
3 ribs celery chopped
1 small yellow onion chopped
2 cloves of garlic chopped
8 cups of water
8 chicken bullion cubes
salt, pepper, red pepper flakes, and Mrs. Dash to taste
Bring to a boil, then simmer for 20 minutes.
Mix in mixture of 1 cup of water plus 1/2 cup of flour plus salt and pepper to thicken, heat through.
Possibly serve with rice. I’m still undecided.
It smells pretty good and looks good. We’ll see if it turns out better than this week did. Not a high bar, right?
